Nitrogen gas is safe for preserving food. It is non-odorous, non-reactive, and non-toxic. Plus, it is readily accessible. In fact, nitrogen is 78% of our atmosphere. These characteristics make preserving food in nitrogen gas affordable and safe.

In addition to displacing oxygen in the air that causes staling, nitrogen modified atmosphere also prevents the growth of dangerous microorganisms like mold, yeast, and aerobic bacteria that require oxygen to survive and grow. REPLACING AIR WITH NITROGEN GAS

The Bread Vault appliances work by introducing nitrogen gas into the food storage sealed chamber and purging out the air that the nitrogen gas replaces.
